Whole Grain Healthy Pancakes / Waffles

Click to enlargeThis is a great recipe that we pulled together from a number of sources to make a Heart Healthy recipe for pancakes or waffles.  These pancakes and waffles are yummy and a great way to get a variety of whole grains, seeds and fruit in one meal.






Ingredients:

  • 1/4-1/2 cup of your favorite seeds (Millet, Sunflower, Sesame, etc)
  • Optional - 1/4 cup of chopped nuts (pecans, walnuts, etc)
  • 1/3 cup whole grain barley or oats
  • 1 1/3 cups skim or reduced-fat buttermilk (add 1 tbsp vinegar per cup of milk, as buttermilk substitute)
  • 2 eggs, lightly beaten
  • 2 tbsp sunflower oil
  • 2 tbsp apple sauce, shredded apples, shredded pears or any other similar fruit
  • 1 cup whole grain breakfast cereal
  • 1/2 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp coarse salt
  • 1/2 teaspoon cinnamon
  • 1/4 tsp ground nutmeg
  • Optional - 1/4 cup of your favorite berries (blueberries, blackberries, etc)

1. Toast the seeds and any nuts for a few minutes in the skillet until slightly brown or to taste.  Keep stirring to make sure they don't cook too quickly.

2. Pour the buttermilk in a mixing bowl with the barley or oats and set it aside.

3. Combine the flours, baking soda, baking powder, salt, cinnamon and nutmeg in a mixing bowl

4. Whisk the eggs into the buttermilk mixture and mix oil, apple sauce and whole grain breakfast cereal together.

5. Add the flour mixture to the buttermilk mixture and stir just until the flour mixture is moist.

6. Mix the toasted seeds and nuts into the pancake mixture along with any berries.

7. For Pancakes - Preheat a nonstick skillet or griddle over medium to medium-high heat.  Coat the surface with cooking oil if you prefer a slight crunchy texture around the edges.  Pour 1/4 cup batter into the skillet for each pancake leaving plenty of room between each pancake.  Cook for 2-4 minutes until the top of the pancake is bubbly and the edges look dry.  Turn the pancake over and cook for another 1-2 minutes until the underside is golden brown.

8. For Waffles - Preheat waffle iron.  Pour the appropriate amount (1/4-1/3 cup) of batter into waffle iron.  Cook the waffles per the waffle iron instructions (usually about 4-6 minutes)

9. Server Pancakes or Waffles with your favorite fruit, maple syrup or any other favorite topping.
